What are the best apples to cook with pork chops?
Some apples are more bitter, tart, or sweet than others. For this recipe, we found the best apples to use are Honeycrisp, Gala, Braeburn or Golden Delicious
Other ingredients you will need for this recipe
Pork chops: We used boneless, lean pork chops. If you decide to use bone-in chops, you might have to adjust the cooking time
Sweet potato: The natural sugars in the sweet potato and apple caramelize and create a beautiful balance to the savoury, salty pork. Also, keep the skin on for extra fibre!
Apple: No need to peel, but do core it and remove seeds. Choose a sweet variety, like Honeycrisp or Gala
Red onion: Becomes nice and tender with a sweet undertone. If you don’t have red onion, shallots would work well
Herbs & spices: Fresh thyme and sage are really nice in this recipe, especially as garnish on the platter, but dried herbs also work well. You will also need garlic powder and paprika
Olive oil: Good quality olive oil is going to add some flavour, healthy fats, and help keep everything juicy while it bakes. Avocado oil, ghee, or grapeseed oil would also work

How to bake everything on one pan
The key to cooking everything on one pan so that it all cooks at the same rate is to chop the veggies the same size so that they don’t burn but also cook through. For this recipe, we have sweet potato, onion and apple that all have to cook within the 30 minutes it will take the boneless pork chops to cook, so we will chop all the veggies and apple to be approximately 1 inch thick
When you chop the veggies and apple, place everything in a large bowl to toss well with olive oil and the herbs. When everything is coated well, you will prevent burning and/or drying out. Transfer the veggies to the baking sheet, along with the seasoned pork chops and bake for 30 minutes
After baking, transfer everything to a serving platter and pour all the juices from the baking sheet onto the pork and veggies, then serve family style

Preheat the oven to 400F

Chop the sweet potatoes into 1 inch cubes, leaving the skin on. Core the apples, remove the seeds, and slice them into 1/4 inch slices, leaving the peel on. Remove skin and ends of the red onion and slice it into 1/2-1 inch chunks. Add everything to a large bowl and toss with 4 tablespoons of olive oil, 1/2 tsp of sea salt and pepper, thyme and torn up sage leaves. Transfer everything to the baking sheet

Rub remaining olive oil, salt, pepper, garlic powder and paprika into both sides of the pork chops and fit them in amongst the veggies on the baking sheet. If you see any areas that need more olive oil, drizzle it on now

Bake for 30 minutes or until pork is cooked through and the veggies are tender. Transfer everything to a serving platter, pour all the juices from the baking sheet onto the pork and veggies on the platter, and serve family style
