In the bowl of a food processor, crumble the block of feta cheese and add in the Greek yogurt
Puree it for about 30 seconds, then add in 2 tablespoons of olive oil. Continue to blend for another 30 seconds
Transfer the creamy dip to a serving bowl and smooth out the top with the back of a spoon or spatula. Drizzle on more olive oil and garnish with lemon zest, red pepper flakes, chopped pistachios, and freshly chopped mint leaves. For even more heat, drip some hot honey generously over the top
