When you are craving pasta but don't want the starchy carbs, try this low carb Prawn Spaghetti with Zucchini Noodles. A quick, one pan recipe that is packed with protein and fibre.
1/2tspred pepper flakesplus more for garnish (adjust to taste)
sea salt and pepper to taste
fresh parsley or basilfor garnish
Instructions
Heat a glug of olive oil in a frying pan on low heat. Add in the minced garlic and raw, deveigned prawns that have been shelled and tails removed. Cook 5 minutes, flip them over, and cook another 5 minutes until they turn pink. Remove them from the pan and set aside
In the same pan, add in the tomatoes, breaking them up if using whole tomatoes from a can. Stir in the Italian seasoning, salt, pepper, 1/2 tsp of red pepper flakes, and spiralized zucchini noodles. Cook for 5 minutes, just enough to warm up the tomatoes and soften the zucchini. Don't overcook or your zucchini noodles will get mushy
Transfer the zucchini and tomatoes to 2 serving bowls and top with 5-6 prawns on each, fresh parsley, basil, grated parmesan cheese, and more red pepper flakes, depending on how spicy you like it
