Make-ahead Southwestern Salad in a Jar (no cooking)
A Southwestern Mason Jar Salad packed with fibre-rich beans, colourful veggies, healthy fats, and a zesty lime vinaigrette. The added crunch from the tortilla chips is the best bonus. This is a make-ahead meal that actually holds up.

1cupkernel corn (canned or frozen and thawed)drained
1/2red onionfinely diced
1cupcherry tomatoeshalved
1/2cupgrated cheesecheddar, Jack, mozza, or feta (or a blend of choice)
2cupsleafy greens
1handful sunflower sprouts
1bunch cilantro
1cuptortilla chipsoptional
lime wedges for servingoptional
avocado slices for servingoptional
Instructions
Prepare the dressing
Combine all the dressing ingredients in a small jar with a lid and shake to combine. Divide the dressing into the bottom of 2 salad jars
Prepare the salad
Drain and rinse a can of black beans. Distribute the beans into the 2 salad jars
Drain a can of corn or thaw frozen corn. Distribute the corn into the 2 salad jars
Dice the red onion, halve the cherry tomatoes, and add them to the 2 salad jars
Add 1/4 cup of grated cheese to each jar
Top each salad jar with a handful of chopped lettuce, sunflower sprouts, and fresh cilantro
Wrap a few tortilla chips in parchment paper or plastic wrap and fit them into the very top of each salad jar before screwing on the lid
When ready to eat, empty the salad jar into a bowl and watch the dressing drizzle over everything. Break up the tortilla chips into the salad and mix everything together
