In a small 8×8 baking dish, add in tomatoes, feta cheese and garlic. Drizzle olive oil over everything and roast for 25 minutes
While that is roasting, spiralize the zucchini and add it to a pan with a lid (no need to turn the heat on unless you want to keep them warm)
Remove the tomatoes and feta from the oven, stir everything together so that you break up the feta and burst the tomatoes. Pour the “sauce” over the zucchin noodles and put a lid on the pan for a few minutes. The heat from the tomatoes and feta will soften the zucchini noodles just enough to eat
