How to make low carb zucchini boats

No matter what you fill zucchini boats with, prepping them is easy.

  1. Cut off the ends and slice the zucchini in half, lengthwise
  2. Use a teaspoon to scoop out the inner flesh and either compost it or put it back into the sauce that you will use to fill the boat with
  3. Simply spoon your filling into the hollow of the zucchini boat, cover it with cheese and bake it until bubbly and golden brown

Low Carb Zucchini Boats with Meat Sauce

Low carb Zucchini Boats is a hearty recipe made with a lean turkey sauce scooped into hollowed out zucchini and baked with cheese.

Ingredients

  • 2 Tbsp olive oil
  • 1 pound lean ground turkey
  • 1 Tbsp Italian seasoning
  • 1/2 tsp sea salt
  • 2 garlic cloves minced
  • 1/2 yellow onion diced
  • 4 mushrooms sliced
  • 1 jar marinara sauce
  • 4 medium zucchini
  • 1 cup parmesan cheese

Instructions

For the sauce

  • Heat a deep frying pan or Dutch oven on low heat with olive oil. Add in the ground turkey and fry until it is cooked through and browned
  • Add in the diced onion and minced garlic, and cook until the onion is translucent. Stir in the Italian seasoning and sea salt
  • Add in the sliced mushrooms and jar of marinara sauce and reduce the heat to simmer while you prepare the zucchini

For the zucchini

  • Preheat the oven to 375F
  • Slice the ends of off the zucchini and cut in half lengthwise. Use a teaspoon to scoop out the inner flesh. You can either compost it or add it back into the meat sauce
  • Spoon the meat sauce into the hollowed out zucchini. Top with parmesan cheese and bake for 30 minutes, or until the cheese is melted and bubbly
