About the healthy ingredients in this easy Brussels Sprouts Salad

Raw Brussels sprouts: Yes! you can eat Brussels sprouts raw. If raw veggies bother your digestion, try roasting or lightly steaming them first. I trimmed off the ends and cut them into thin slivers. You can also chop them up in a food processor
Carrot: Adds nutrients, crunch and colour to this salad. Simply use a cheese grater to shred it up into fine pieces
Chickpeas: I used just 1/2 a can (drained and rinsed really well) of chickpeas in this salad recipe which provides protein and lots of fibre. If you have trouble digesting beans, roast them for 40 minutes with some olive oil before adding them to the salad
Raisins: Since childhood, raisins have been my favourite dried fruit. I love salads with fruit for their sweetness and chewy texture. Don’t have raisins? Dried cranberries, goji berries, dates, or figs would work really well in this salad
Goat cheese: Adds protein, creaminess, and a slight tang to this salad. If you want to keep this recipe vegan, simply sub the goat cheese for walnuts
Apple: Chop up a red or green apple into cubes and slices and keep them in a bowl of water with a squeeze of lemon juice, to prevent them from browning until you are ready to serve it. Honeycrisp and Granny Smith are my favourite apple varieties
Honey Dijon dressing: I use this simple dressing recipe in many of my salads because it’s fresh, it calls for just a handful of ingredients, and it’s a delicious combination of sweet and savoury. In a small bowl or measuring cup, stir together olive oil, apple cider vinegar, Dijon mustard, honey, and salt and pepper
