This refreshing lemon balm lavender iced tea is one of my favourite summer rituals. It’s light, naturally caffeine-free, incredibly refreshing, and made with herbs that have been used for centuries to promote calm, relaxation, and restorative sleep.

While no single food or herb is a magic solution, building small daily habits that support your nervous system can make a meaningful difference over time.

Equipment

  • tea strainer

Ingredients

  • 1 cup fresh lemon balm leaves
  • 3 fresh sprigs of lavender
  • 1 cup boiling water
  • ½ teaspoon honey
  • Juice from a squeeze of fresh lemon
  • Sparkling carbonated water
  • Ice
  • Lemon slices for garnish

Instructions

  • Pour boiling water over the fresh lemon balm and lavender
  • Steep for 10 minutes
  • Strain into a glass
  • Stir in the honey until dissolved
  • Add a generous squeeze of fresh lemon
  • Fill the glass with ice
  • Top with sparkling water
  • Garnish with fresh lemon slices and enjoy
