Baked eggs with herbs, made on a sheet pan, is an easy breakfast or brunch recipe that is time-saving, nutritious, and fun to make different every time.
This is a recipe I demonstrated on the Celebrity Chef Stage at the 2022 Vancouver Wellness Show. When I was creating it, like with any recipe I create, I keep a few elements in mind. Blood sugar regulation, high protein, liver supportive, and good for the ol’ brain.

What you will need

- 1 baking sheet
- 1 glass or stainless mixing bowl
- 1 whisk
- 1 cutting board
- 1 sheet parchment paper to fit baking sheet
Ingredients
- 12 whole eggs
- 1/4 cup milk of choice
Optional Additions:
- 1 cup microgreens or arugula
- 1/4Â red onion, chopped
- 3Â mushrooms
- 1Â artichoke (drained from can or jar)
- 1/2 cup crumbled, cooked sausage or bacon
- 1/2 tsp sea salt and pepper to taste
- herbs, fresh or dried
- 1/2 cup cheese (cheddar, feta, goat, mozzarella)

Preheat oven to 375F

Line baking sheet with parchment paper, for easy clean-up

Whisk together 12 eggs with salt, pepper to taste and milk

Pour egg mixture onto prepared baking sheet and "decorate" with chopped veggies, cheese, and cooked meat (if using)

Bake for 30 minutes. Remove tray from oven, top with fresh micro greens or arugula, and slice into squares. You can serve as is or on top of toast.
