This low carb Chicken Taco Lettuce Wrap recipe gives “family style” vibes, where everyone is sharing, and each can customize their ingredients to suit their taste (ideal for picky eaters).

Traditional packaged taco seasoning is quite high in sodium. After serving this recipe to my family (my recipe testers), the first comment my husband made was that these were way less salty than what we have had in restaurants. Also, this homemade taco seasoning has just the right amount of heat. Perfect! I say I nailed it.

Chicken Taco Lettuce Wraps

Low carb, high protein chicken taco lettuce wraps without the tortilla. Seasoned with taco spices and topped with veggies and cheese

Ingredients

  • 1 pound ground chicken
  • 2 Tbsp olive oil
  • 1/2 yellow onion diced
  • 2 cloves garlic minced
  • 1 Tbsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp 1/4-1/2 red pepper flakes
  • 1/4 cup warm water
  • 1/4 tsp dried oregano or parsley

Toppings

  • Diced tomatoes
  • Diced red onion
  • Fresh cilantro
  • Diced green onion
  • Grated cheddar or Jack cheese
  • 1 carrot grated
  • Sour cream
  • Romaine or iceberg lettuce leaves

Guacamole

  • 1 ripe avocado
  • 1/4 tsp sea salt
  • 1/2 from Juice lemon or lime
  • 1 Tbsp finely diced red onion optional

Instructions

  • Heat oil in a frying pan on low-medium heat. Cook ground chicken until brown, stirring in minced garlic, dried oregano or parsley, and chopped onion. Cook until onion is translucent
  • Make taco spice mixture by adding chili powder, cumin, paprika,1/2 tsp sea salt, and red pepper flakes to 1/4 cup warm water. Stir well and pour onto the chicken mixture. Cook for 3 minutes for flavours to marry
  • Prep chopped veggies, sour cream, and other toppings in bowls for self serving. Make the guacamole by mixing all guacamole ingredients in a bowl and mash with a fork
  • Spoon cooked taco meat into lettuce leaves and top with diced veggies, cheese, sour cream, guacamole and fresh cilantro
