Quick Savoury Mushroom & Cheese Toast

Avocado toast had it’s 15 minutes, so let’s make way for the next craze….mushrooms on toast! This recipe is simple and quick (just how I like it), but it has some great benefits for women heading into, or already in, menopause.

Sourdough is my top pick, along with dark rye, as bread choices because they are lower on the glycemic index, and blood sugar balance is one important strategy to ease menopause symptoms. Since every meal should contain a source of protein, we added mozzarella and we don’t think you’ll be upset about it.

 One serving of this toast is a whopping 57 grams of protein and there’s an additional bonus– cheese also high in calcium, and that is what we need for bone health in mid-life.

Ingredients

  • 1 piece sourdough bread
  • 1/4 cup mozzarella
  • 1 Tbsp salted butter
  • 1 tsp balsamic reduction
  • 1 shake red pepper flakes

Instructions

  • Preheat oven to broil
  • Heat a frying pan, melt butter, add sliced mushrooms and cook for 3-4 minutes
  • Toast the sourdough bread
  • Add cooked mushrooms to toast, top with mozzarella, and place under broiler for 3-4 minutes, or until cheese is bubbly and melted
  • When done, remove from oven, transfer to a plate, and garnish with balsamic reduction and chilli flakes
