Protein Toast with Roasted Strawberries and Ricotta Cheese

This fancy protein toast with roasted strawberries and ricotta cheese is not just pretty to look at, it’s pretty delicious. Whipped ricotta gives a decadent creaminess, topped with warm berries that are sweet and delicate. This is a balanced breakfast or snack that will leave you feeling satiated and nourished in perimenopause and beyond.

Ingredients you will need

  • 3/4 cup traditional ricotta cheese
  • a pinch of sea salt
  • 1 cup fresh or frozen strawberries
  • 1 tsp lemon juice
  • 1 tsp honey
  • fresh herbs for garnish (thyme, basil, or mint)
  • 2 pieces dark rye bread

How to make fancy toast

  1. Preheat the oven to 400F. Add the lemon juice, honey, and the strawberries to an oven-safe dish and give it a light stir to combine. Roast for 20 minutes. Fresh berries are best, but frozen ones work well, too.
  2. While the berries are roasting, add the ricotta cheese and sea salt to a blender cup and blend for under a minute until the ricotta is smooth and creamy. Transfer to a bowl for serving.
  3. Toast thick pieces of sourdough or dark rye bread until golden. Spread with a generous layer of the whipped ricotta and top with the roasted strawberries and fresh herbs.
