5 Minute Chickpea Salad Without Mayo

A healthy chickpea salad made without mayo to use on toast, in lettuce wraps, or as a dip. It’s a quick blend of zesty capers, lemon, yogurt, mustard, and dill. It’s an egg-free, tuna-free, and chicken-free version for more fibre without compromising on protein. Use it on toasted sourdough, rolled up in a wrap, or in lettuce leaves for a low carb snack.

How to make chickpea salad without mayonnaise

Ingredients you will need

  • 1 3/4 cups of canned chickpeas, drained and rinsed
  • 1/2 cup plain Greek yogurt
  • 1/4 cucumber, diced
  • 1 green onion, chopped
  • 1 Tbsp Dijon mustard
  • 1/2 lemon, juiced
  • 1 Tbsp dill
  • 1 tsp capers
  • salt and pepper to taste
  • sourdough, tortilla, or lettuce leaves for serving, plus tomato and cucumber slices (optional)

Instructions

  1. Drain and rinse a large can of chickpeas. Add 1/2 cup to a bowl and mash with a fork or potato masher. Add in the rest of the can, along with all the other salad ingredients and mix well
  2. Spoon it into lettuce leaves, a tortilla, or on toast!
