Key ingredients you will need (and their health benefits)
Olive oil | A few tablespoons of quality olive oil is what you will sautee the garlic in. It’s a healthy fat to fuel your brain and hormones
Garlic | One whole garlic clove, minced benefits cardiovascular health and the immune system
Cherry tomatoes | 1 cup of small cherry tomatoes are rich in iron, antioxidants, lycopene and vitamin C
Black olives | Use a handful of sliced black, pitted olives which provide a nice saltiness and anti-inflammatory properties
Dry pasta | Use quality dried pasta from Italy for best results. As it cooks, the starch is released and creates a thick sauce
Water or broth | Use 2 cups of water or chicken/vegetable broth to cook the pasta in. If you use chicken broth, you will be adding extra protein
Pecorino cheese | Has a nice sharp, salty flavour. It is made from sheep’s milk and you will need about 1 cup of grated pecorino
Lemon zest | Add zest from 1/2 a lemon at the end to bring this pasta alive with freshness
Red pepper flakes | An optional garnish at the end to add some heat to the pasta
How to make one pot pasta
- Heat the olive oil on low heat in a deep pan that is big enough to fit the length of dry pasta and has a lid. Add the minced garlic to the heated olive oil and cook for a minute
- Add in the cup of cherry tomatoes, sliced olives, dry spaghetti, water or broth. Increase the heat to high, put a lid on the pan and bring it to a boil. Cook for 5-6 minutes, stirring occasionally so that the pasta doesn’t stick together
- Once most of the liquid has been absorbed, turn off the heat and stir in the pecorino cheese, lemon zest, and red pepper flakes. Divide into 2 bowls and serve immediately

- 1 garlic clove minced
- 1 cup cherry tomatoes
- 6 pitted black olives sliced
- 4 oz dry spaghetti
- 2 cups water
- 1 cup pecorino cheese grated
- zest from 1/2 lemon
- 1/4 tsp red pepper flakes optional
Instructions
