How to make zucchini noodles

I’m obsessed with my electric spiralizer that my daughter bought me for Christmas one year. It quickly turns a zucchini into noodles with the press of the on switch. If you don’t have a spiralizer, you can use a vegetable peeler and make thin strips that will resemble a flat pasta noodle. They both taste the same! It’s just a matter of what shape you like your pasta to be.

Ingredients you will need for this recipe

  • Prawns: Raw fresh or frozen both work. Try to buy them deveigned and shelled to save you time and frustration 😉
  • Zucchini squash: If you are using a spiralizer, buy the smaller zucchinis
  • Whole tomatoes: I opened up a can of peeled, whole San Marzano tomatoes and used just 1 and froze the rest for another recipe. You could also chop up a fresh Roma tomato or use the small cherry tomatoes. For a flavour boost, roast them with a splash of olive oil and balsamic vinegar until they blister!
  • Herbs: Fresh parsley and/or basil will garnish this dish, plus you will need a teaspoon of Italian seasoning
  • Fresh garlic: Adds nutrients and immune-boosting properties, plus the best flavour. Garlic powder is an option but fresh is best
  • Parmesan: Garnish your finished dish with some freshly grated parmesan cheese. If you are dairy intolerant, use nutritional yeast

Equipment you will need

A spiralizer or vegetable peeler

A non-toxic, non-stick frying pan

How to make this prawns and zucchini noodles recipe

  1. Heat a glug of olive oil in a frying pan on low heat. Add in the minced garlic and raw, deveigned prawns that have been shelled and tails removed. Cook 5 minutes, flip them over, and cook another 5 minutes until they turn pink. Remove them from the pan and set aside
  2. In the same pan, add in the tomato, breaking it up if using whole tomatoes from a can. Stir in the Italian seasoning, salt, pepper, 1/2 tsp of the red pepper flakes, and spiralized zucchini noodles. Cook for 5 minutes, tossing together just enough to warm up the tomatoes and soften the zucchini. Don’t overcook or your zucchini noodles will get mushy
  3. Transfer the zucchini and tomatoes to 2 serving bowls and top with 5-6 prawns on each, fresh parsley, basil, grated parmesan cheese, and more red pepper flakes, depending on how spicy you like it

  • 2 Tbsp olive oil

  • 1 whole tomato or a handful of cherry tomatoes
  • 1 tsp Italian seasoning
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp red pepper flakes plus more for garnish (adjust to taste)
  • sea salt and pepper to taste
  • fresh parsley or basil for garnish
