The Proper Layering Order (Bottom to Top)

  1. Lime Vinaigrette: Always start with the dressing at the bottom. This keeps delicate ingredients from getting soggy and allows sturdy veggies to marinate slightly.
  2. Hearty Vegetables: Think bell peppers, red onion, corn, cherry tomatoes, or leftover roasted sweet potatoes. These can handle sitting in the lime dressing without breaking down.
  3. Protein Layer: Black beans, chickpeas, grilled chicken, or tofu work beautifully here and help make the salad satisfying.
  4. Leafy Greens: Romaine, arugula, or shredded cabbage act as a barrier between moist ingredients and crunchy toppings. Always keep leafy greens up at the top of the jar, away from the dressing.
  5. Crunchy Toppings (The Key Step!): Tortilla chips should go in last, right at the top of the jar. For extra protection, you can place them in a small silicone cup or parchment packet before adding them to the jar.

The best jars to use are the ones that you can recycle! I love using pasta jars that I have run through the dishwasher and fully dried. You can purchase mason jars on Amazon or find them at yard sales.

Salad Base

  • Romaine or shredded cabbage
  • Sunflower sprouts or microgreens
  • Black beans (rinsed and drained)
  • Corn (fresh, frozen & thawed, or roasted)
  • Cherry tomatoes, halved
  • Red onion, finely chopped
  • Fresh cilantro, whole and chopped

Crunch

  • Crushed tortilla chips (thick chips hold up best). Choose gluten-free corn or whole wheat

Optional Add-Ins

  • Grilled chicken or pork, shredded or chopped
  • Shredded cheese or dairy-free alternative
  • Microgreens or sprouts
  • Roasted, diced sweet potato
  • Pepitas (pumpkin seeds)
  • Avocado (add day-of if possible)
  • Cooked quinoa for extra protein
  • An extra wedge of lime on the top of the jar to squeeze in when ready to eat

Fresh Lime Vinaigrette

  • 2 12oz Mason jars

Ingredients

For the dressing

  • ¼ cup fresh lime juice about 2 limes
  • ¼ cup extra virgin olive or avocado oil
  • ¼ cup fresh cilantro chopped
  • 1 tbsp honey or maple syrup
  • 1 clove garlic minced or grated
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • ¼ tsp sea salt or to taste
  • ¼ tsp black pepper or to taste

For the salad

  • 1.5 cups black beans drained and rinsed
  • 1 cup kernel corn (canned or frozen and thawed) drained
  • 1/2 red onion finely diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup grated cheese cheddar, Jack, mozza, or feta (or a blend of choice)
  • 2 cups leafy greens
  • 1 handful sunflower sprouts
  • 1 bunch cilantro
  • 1 cup tortilla chips optional
  • lime wedges for serving optional
  • avocado slices for serving optional

Instructions

Prepare the dressing

  • Combine all the dressing ingredients in a small jar with a lid and shake to combine. Divide the dressing into the bottom of 2 salad jars

Prepare the salad

  • Drain and rinse a can of black beans. Distribute the beans into the 2 salad jars
  • Drain a can of corn or thaw frozen corn. Distribute the corn into the 2 salad jars
  • Dice the red onion, halve the cherry tomatoes, and add them to the 2 salad jars
  • Add 1/4 cup of grated cheese to each jar
  • Top each salad jar with a handful of chopped lettuce, sunflower sprouts, and fresh cilantro
  • Wrap a few tortilla chips in parchment paper or plastic wrap and fit them into the very top of each salad jar before screwing on the lid
  • When ready to eat, empty the salad jar into a bowl and watch the dressing drizzle over everything. Break up the tortilla chips into the salad and mix everything together
