Ingredients you will need for this easy Quinoa Salad recipe

  • Quinoa- is considered a seed, not a grain! It is also a complete protein.
  • Cucumber
  • Apple- green or red
  • Feta cheese
  • Arugula or mixed greens
  • Raw pumpkin seeds
  • Honey-Dijon vinaigrette: honey, Dijon mustard, olive oil, apple cider vinegar, salt, pepper

Ingredients

  • 1/2 cup uncooked quinoa
  • 1 cup water or vegetable broth
  • 1/2 cucumber diced
  • 1 apple cored and diced
  • 1/2 cup dried cranberries
  • 1 cup crumbled feta cheese
  • 1/2 cup raw pumpkin seeds
  • 2 cups arugula

For the vinaigrette

  • 1/4 cup olive oil
  • 1 Tbsp Dijon mustard
  • 1 tsp honey
  • 1 Tbsp apple cider vinegar
  • pinch salt and pepper to taste

Instructions

  • Bring the uncooked quinoa and water to a boil in a small pot on the stovetop with a lid. Once boiling, reduce the heat to low and simmer for 15 minutes. Remove from heat and fluff with a fork
  • Assemble the salad ingredients in a large bowl and toss with the dressing. Stir in the cooked quinoa and toss to coat
  • Serve as is, or as a side dish with chicken or fish
